What you do is drip water from an ice fount over a sugar cube that dissolved into the Absinthe. See the photos. The taste is somewhat similar to pastis. Absinthe was popular in France in late 19th & early 20th centuries and it was the poison of choice for Vincent Van Gogh which probably killed far too many brain cells and led to his demise. The restaurant has quite a good selection of food/meal menu at reasonable prices.
